Ingredients:
Dry Ingredients:
1 and ¼ cups of all-purpose flour
¾ cup of old fashioned oats
1 tablespoon +1 tsp baking powder
1/2 teaspoon salt
1 tablespoon of cinnamon
Wet Ingredients:
¾ cup peanut butter (I used Natural Chunky Peanut Butter)
1.5 cups mashed really ripe bananas or two large ripe
bananas
2 large eggs
½ cup dark brown sugar
1 tablespoon of vanilla flavoring powder or liquid
1 cups milk (I used skim)
Instructions:
Preheat oven to 375 degrees F
In a large bowl, mix the dry ingredients and set aside.
In another large bowl, mix the wet ingredients and stir
until blended.
Add the mixed wet ingredients to the bowl containing the dry
ingredients and stir until JUST combined (otherwise your muffins will become
tough). Batter might be lumpy, but don’t worry about it, they’ll cook out.
Fill prepared muffin cups with batter and bake for 18-20
minutes or until toothpick comes out clean.
